Ulytra Teks MT1-00045 - Advantages:
Due to stabilizing of milk protein, all technological processes related to heating of the row material, finished products and ripening are simplified during the process of manufacturing of fermented milk products enabling to prevent the number of damages of fermented milk products occurring during manufacturing process:
- provides possibility to make thermal processing protecting the protein against denaturation during heating process
- provides necessary viscosity at all stages of technological process (depending on the dose) and prevents its violation while feeding with pump, thermal exchange etc.
- prevents phase disengagement
- enables to regulate chewy texture, viscosity and density of finished product
- enables to keep stable consistence during continuous storage and (or) under unfavorable conditions of transporting and storage

Ultra Tex MT1-0006 – Designed for curds.
Stabilizing systems MT1-0006 has the distinct dispersive specifications, is conductive to immediate viscosity in cold system being in contact with cottage cheese, curds. Stabilizing system Ultra Tex MT1-0006 is resistible to high level of mechanical effect, has excellent steadiness to several cycles of freezing/ thawing, provides excellent stability of the product; there is no tendency to syneresis; good portability of changing storage conditions. The product has saturated, creamy sensation in the mouth, short, smooth texture. Stabilizing system MT1-0006 does not conceal the scents added to curds, enables to receive the additional quality of moisture that makes possible to reduce the price of the product.

Guidelines for applying:
Stabilizing system Ultra Tex MT1-0006 to add the cottage cheese without prior mixing of the stabilizer with dry constituents. Mix the mixture thoroughly.
Add other formulating ingredients.
Further cooking of cheese curds according to regulations.
