Applying:
It is designed for replacement of the part of formulating quantity of milk powder. It enables to reduce prime cost without loss of finished product quality. It gives saturated, cream sensation in the mouth. Stabilizing system ICE – 0020 promotes to increasing of ice-cream resistance to thawing. Applying of given stabilizer does not demand preliminary preparation before usage and adding of changes into technological process. Stabilizing system ICE – 0020 enables to replace till 50% of formulating quantity of fat-free milk-powder.

Guidelines for applying:
- Adding of stabilizing system ICE – 0020 in standardized milk in the mixtures with other dry components according to formulation with rapid mixing.
- Heating till the temperature 75-85°Ñ. Homogeneization.
- Pasterurization (pasterurization temperature 90-100°C).
- Ripening of mixture.
- Freezing.

Dosage:
Dosage ULTRA TEX ICE – 0020 depend on the necessary structure.
Recommended dosage 2,5% – 3,0%.
