Starch-free stabilizing system

PE "Textra Vita " offers for sale Ultra Tex MT1-0009 – starch-free stabilizing system for fermented milk products.

Applying:

It is designed for fermented milk products: yoghurts, sour cream, cottage cheese deserts, fermented milk drinks. It has good dispersive characteristics. Dense cluster is formed at the stage of ripening. Stabilizing Ultra Tex MT1-0009 makes thickness with feebly marked properties of gel that is easy divided into cream texture. It is excellent combined with milk proteins preventing settling and folding of proteins. It makes the sensation of saturation in the products with low or reduced content of fat. There is no tendency for syneresis. Fermented milk products have soft clear, smooth, glossy texture, gain resistence to changing storage conditions.

Guidelines for applying:

  • Stabilizing system Ultra Tex MT1-0009 add to milk (milk-fat) mixture under temperature 20±100C, preliminary having dispersed stabilizer in the little quality of the milk. Mix the mixture thoroughly.
  • Homogenization
  • Pasterurization
  • Further keeping of technological process according to regulative documents

Dosage:

  • drinking yogurt- 0,4-0,5%
  • desert yoghurt - 0,9-1,2%
  • curdy desert – 1,1-1,5%
  • sour cream 20% fat status – 0,5-0,6%
  • sour cream 15% fat status – 0,5-0,6%

Advantages:

Bt virtue of stabilizing of milk protein, in the process of fermented milk products manufacturing, all technological processes related to burning of original stock, finished product and ripening is simplified enabling to prevent numerous defects s of fermented milk products occurring during of manufacturing process:

  • provides possibility to make thermal treatment during heating process
  • give necessary viscosity at each stage of technological process (depending on dosage) and prevents its interruption while pump feeding, thermal exchange etc.
  • prevents phase disengagement
  • enables to regulate consistence, viscosity and density of finished product
  • enables to hold stable consistence during durable storage and (or) within unfavorable conditions of transporting and storage
